Chef Matt Jones and Amber McCool have been a leading culinary duo since 1999, when they opened The Patron Restaurant in Louisville, KY. The award-winning restaurant was one of Louisville’s and the Midwest’s Top Tables. Their modern, organic repertoire showcased garden market produce highlighted by a Slow Food approach. Not only did The Patron lead the way in featuring local organic produce in food, but McCool’s chef approach to mixology also put a stamp on their inspired cocktails, which brought many accolades to the restaurant. Hosting monthly wine dinners, private events, off-premise catering, and participating in local charity events stretched their culinary talent throughout the tenure of The Patron Restaurant.
After a wildly successful 12 years at The Patron Restaurant, Jones and McCool decided to close those doors only to open new ones by branding a line of products and continuing catering as Red Clover. Est. 2010, they have been selling their products across the Midwest in retail establishments such as Whole Foods Markets, Local Groceries, and Boutique Wine Shops that include a collection of cheese spreads and accompaniments along with their Lavosh Crackers as their coveted flagship product.
